The other day, I had the afternoon off and felt like baking something. I found a recipe online and tweaked it a bit so I could simply use up a bunch of spare things hanging around in the pantry.
I think the result turned out pretty well. These are a bit soft (a pretty fudgey consistency), so the chunks of chocolate add a nice crunch. And they're peanut butter and chocolate, my all-time favorite combo. They were also super easy and did not take long to make.

- 1 3/4 Cups Peanut Butter
- 1 1/2 Sticks of Butter, softened
- 2 Cups Powdered Sugar
- 2 Cups Graham Cracker Crumbs
- 1 Cup Chocolate Chunks
- 1/2 Cup Melted Peanut Butter
- 1 Cup Chocolate Chips, melted
Start by whipping the peanut butter and butter together. Whip until they are smooth.
Slowly add in your powdered sugar (to keep it from flying all over the place) and then add the graham cracker crumbs. Stir until everything is combined. The mixture should be the consistency of a grainy paste.
Add your chocolate chunks in and stir to make sure they are evenly distributed. Then spoon the mixture into a baking dish. I used an 8x8 dish. Smooth the top of the mixture out to make sure everything is level.
Then, in a separate bowl, combine your melted peanut butter and melted chocolate chips. Spoon and level the melted pb/chocolate mixture overtop the graham cracker mixture. Then, place the bars in the fridge and let them set for at least 2 hours before cutting.
