This past weekend was a sleepover weekend and I wanted to make something to snack on. I came across these delicious treats and thought they'd be perfect. Cookie Dough, brownies and chocolate. What's not to like?
Recipe:
1 pkg fudge brownie mix, baked and cooled
3/4 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup white sugar
2 Tbsp milk
1 tsp vanilla extract
2 cups all-purpose flour
Pinch salt
2 cups miniature chocolate chips, divided
Any kind of melting chocolate
1. Start by baking your fudgy brownie mix according to package directions. I used duncan heins but you can use any type you please. Make sure that you make fudgy brownies, as apposed to cakey ones because it will make them easier to mold around the cookie dough. Set them aside to cool.
2. Next, make the cookie dough. Start by beating butter and both sugars in a mixer until creamy. Add milk and the vanilla then stir to combine. Slowly add in the flour and add the pinch of salt. Lastly stir in 1 CUP of the mini chocolate chips.
3. On a foil lined baking sheet, drop teaspoon sized balls of the cookie dough. I rolled mine to make them a bit more uniform and to help mold them together. Pop them into the fridge for about an hour to firm up.
4. Cut brownies into about 1 in. squares. Flatten and squish the squares with your palm. Take a chilled cookie dough ball and place it into the middle of the flattened brownie. Mold the brownie around the dough, until it is completely covered. Repeat until all the dough is covered and place them back in the fridge for about an hour.
5. Melt your chocolate. Using a fork or a toothpick, drop the cookied dough-brownie balls into the chocolate until completely covered. Return to the foil lined cookie sheet and sprinkle some of the remaining mini chocolate chips on top. Put them back into the fridge until the chocolate hardens up.
