I know I just posted a cookie recipe recently, but cookies are my go-to item when baking. This time I decided to experiment and try to combine 3 of my favorite types of cookies: Oatmeal, Chocolate Chip, and Peanut Butter. I found a few different recipes and tweaked them until I thought I had something that worked. I had to experiment a bit to get the right consistency, so I apologize if the measurements are not 100% accurate.
1/2 C Butter, Room Temperature
1 1/4 Cup Brown Sugar
1/2 Cup White Sugar
1/2 Cup Peanut Butter
1 Egg
2 Teaspoons Vanilla Extract
1 1/4 Cup All Purpose Flour
1 Cup Old Fashioned Oats
1/2 Teaspoon Baking Powder
1 Cup Chocolate and Peanut Butter Chips (You can use plain chocolate chips but I decided to use a mixed bag)
1. Combine the room temperature butter and both sugars.
2. Next, add the peanut butter and stir until combined with the butter and sugars.
3. Add in the egg and vanilla and stir.
4. Then add the oats and baking powder. Slowly add in your flour. If the dough looks a bit dry slowly add in water to to soften it. If it is too wet slowly add a bit more flour to dry it out.
5. I wrapped the dough up and kept it in the fridge overnight to tighten it up a bit. This also helps prevent the cookies from spreading too much. This works well with most cookie doughs, but is not a necessary step.
6. When you're ready to bake the dough, preheat your oven to 350. Bake cookies for about 10-12 minutes. When they've cooled, enjoy!
